UBE Carrascal is a field blend of Palomino Fino, Palomino Jerez and Palomino Pelusón from a single vineyard called “Finca Las Vegas” planted in 1903 on Albarizas de Lentejuelas in the Pago de Carracal (Sanlúcar) facing west towards the Atlantic Ocean. Grapes were hand-harvested early September, pressed whole-cluster into an old 1000L Jerez bota for spontaneous fermentation without temperature control. Total aging was for 28 months, with oxidative aging under flor for the final 3 months. Bottled with a light filtration and released around 2 years after harvest, this pago and type of chalk usually gives wines of distinctive elegance and finesse.
